Golden, crispy fritters made with juicy tomatoes, cooling cucumber, creamy feta, and fresh herbs—pan-fried in olive oil and served with tzatziki and a sprinkle of fresh dill. A Mediterranean-inspired snack, appetizer, or light meal!

Ingredients

  • 2 ripe tomatoes, diced
  • ½ English cucumber, grated. Squeeze out moisture for a more crispy fritter.
  • ½ cup crumbled feta
  • 2 garlic cloves, minced
  • 1–2 tbsp chopped fresh dill
  • 1–2 tbsp chopped fresh parsley
  • 2 eggs
  • ¼ cup flour (more as needed to bind)
  • Salt and pepper, to taste
  • Olive oil, for pan-frying
  • Tzatziki and fresh dill, for serving
Homemade Tzatziki if Using
  • 1 cup plain Greek yogurt (full-fat works best)
  • ½ English cucumber, grated and excess water squeezed out
  • 1–2 garlic cloves, finely minced or grated
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill
  • Salt, to taste

Instructions

  1. Dice the tomatoes and grate the cucumber. Use a clean towel or paper towel to squeeze out as much liquid from the cucumber as possible for a more crispy fritter. This part is totally optional.
  2. In a large bowl, combine the tomatoes, grated cucumber, crumbled feta, garlic, dill, parsley, eggs, flour, salt, and pepper. Mix until well combined. If the mixture feels too loose, add a little more flour.
  3. In a large skillet, heat a thin layer of olive oil over medium heat.
  4. Scoop about 2–3 tablespoons of the mixture for each fritter and gently place into the hot pan. Flatten slightly with the back of a spoon. Cook for 3–4 minutes per side, or until golden and cooked through. Transfer to a paper towel-lined plate.
  5. Plate the fritters warm with a generous dollop of store bought or homemade tzatziki and garnish with extra fresh dill.
