Whipped Feta w/ Roasted Honey Strawberries

Ingredients
- 1 Pint Strawberries
- 1 tbsp Balsamic Vinegar
- 1 tbsp Honey
- Few cracks of black pepper
- 8oz block of feta
- 1/2 cup ricotta cheese
- 2-3 tbsp extra virgin olive oil
- 1-2 tsp lemon juice
- Few cracks of black pepper
- Few splashed of milk, incase need to thin out
Instructions
- Preheat the oven to 375°F (190°C).
- Hull and slice the strawberries into thin pieces. Place them in a small baking dish.
- Drizzle the strawberries with balsamic vinegar and honey, then season with freshly cracked black pepper. Toss gently to coat.
- Roast for about 15 minutes, or until the strawberries are soft and slightly caramelized.
- In a food processor or high-speed blender, combine the feta, ricotta, olive oil, lemon juice, and a pinch of pepper. Blend until smooth and creamy. If the mixture is too thick, add a splash or two of milk to loosen it up.
- Once the strawberries are roasted, sprinkle with freshly chopped mint.
