  • 1 stick unsalted butter, softened
  • ½ cup brown sugar
  • ⅓ cup granulated sugar (or maple sugar)
  • 1½ tsp vanilla extract
  • 1 egg, room temp
  • ⅓ cup creamy peanut butter
  • 1¼ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp kosher salt
