These are gluten free pancakes that can easily be meal prepped in the freezer and cooked throughout the week. Just freeze the batter all at once, add some toppings, freeze, and cook some when needed.

this recipe is gluten free and is perfect for those busy busy when you just dont feel like whipping up batter.

Ingredients

  • 4 eggs
  • 1/2 cup milk of choice
  • 2 tsp vanilla extract
  • 4 tbsp pure maple syrup
  • 2 tbsp baking powder
  • Pinch of salt
  • 1.5 cups of gf flour or can also use regular.
  • Toppings such as berries, chocolate chips, apples, shredded coconut.

Instructions

  1. To a bowl, add eggs, milk, maple syrup, vanilla and whisk.
  2. Then, add baking powder, salt, and flour. Whisk to incorporate. Don’t over mix.
  3. Pour batter into an ice cube tray. Add toppings and freeze.
  4. When ready to use, heat some oil on a pan on LOW heat and add the frozen batter. These will take a few minutes to fully melt, gently press down on each pancake to help the batter melt. Use a cover if you have one.
  5. Flip each pancake and cook until no more batter is oozing out.
  6. Enjoy with maple syrup, jam, or just as is.

Notes

sub gf flour with regular all purpoe flour, oat flour, or even almond or coconut

sub maple syrup with honey or coconut sugar

use a butter knife to help remove from ice cube tray

use a silicone ice cube tray for easy removal
