a gluten free pancake batter recipe that can be frozen and used for easy breakfasts throughout the week

Ingredients

  • 4 eggs
  • 2 tsp vanilla extract
  • 4 tbsp pure maple syrup
  • 1/2 cup milk of choice
  • 1 cup gluten free flour
  • 1/2 cup raw cacao
  • Mini chocolate chips for topping

Instructions

  1. To a bowl, add all the wet ingredients and whisk.
  2. Then, add the fry ingredients just not the chocolate chips and mix to incorporate. Don’t over mix.
  3. Pour batter evenly to a regular size ice cube tray. Top with mini chocolate chips
  4. When ready to cook, carefully remove from tray , using a butter knife helps, heat some oil on low-medium heat and place frozen batter cubes on the pan. Cover and cook about 3 minutes per side until golden brown and cooked thought. Gently press in each pancakes to make sure runny batter is not oozing out.

Notes

sub gf flour with regular, almond, coconut, or oat

sub maple syrup with honey or coconut sugar

use a silicone ice cube tray for easier removal
